It's quite easy to follow my general approach to a low carb diet in Chipotle, which happens to be not far from the place I work.

My go-to item in Chipotle

– Can I get a bowl to go, please. No rice, pinto beans, chicken and queso, please. Mild salsa, corn, cheese, sour cream, guac.

Swap chicken with steak or barbacoa if you want beef, or with carnitas if you prefer pork (I don't). Go veggie if you like (then your guac is free).

You can notice that my order has some carbs (in queso and corn salsa at least), but without rice and tortilla, it's really not too much: this meal will increase your glucose level, but just a tiny bit. Here's the data from my continuous glucose monitoring:
